Details:
As mentioned in MC791101, Windows 365 gallery images with preinstalled Microsoft 365 apps feature Teams (classic). In an upcoming update of our gallery images, this version of Teams will be replaced with new Teams, therefore any newly provisioned devices from these images will exclusively feature new Teams.
